Ingredients:
– 1 can of good quality coconut milk (except the water portion) ––Chill can in fridge prior to opening to
allow the creamy part to separate **
– (I find these brands are the best: Thai Kitchen, Aroy-D, or Grace Coconut milk)
– Approx 1 cup of Silk Unsweetened Vanilla Cashew Milk
– I use cashew milk as I find it’s thicker/creamier but you could also use an unsweetened almond
milk or oat milk
– You can add more or less depending on the consistency you desire –– I prefer a thicker
consistency to create more of a latte
– 4 packets of stevia (add more or less to taste) feel free to experiment with other ways to add sweetness based on your personal preferences such as adding some maple syrup, or honey! My one rule for adding sweetness is to stay away from any artificial sweeteners and sugar alcohols because of the negative effects on our gut flora!
– A splash of vanilla extract
**I find quality matters for the coconut milk if you are looking for that creamy taste! Higher quality coconut milk brands listed above have worked best for me, as they are thicker and creamier! Make sure to chill the coconut milk can in the fridge prior to opening so the coconut milk hardens and separates from the water component. You don’t want to add the coconut water to the mix as it will water it down…so scoop out the thick coconut milk portion into your blender to make the creamer! You can re-purpose the coconut water for something else if you like!
Directions:
Combine chilled coconut milk, cashew milk, stevia and vanilla in a mixer and blend until smooth (I use my Ninja or Magic Bullet). Can store in a Maison jar in the fridge for ~ 4-5 days!
To prepare your coffee, pour ~ 1/4 cup of dairy-free coffee creamer into cup and heat up on stove-top or microwave (I find coffee tastes best hot! So heating up the creamer before adding the coffee helps keep everything warm and it mixes easier!).
Once the creamer is warmed, you can either add coffee to the cup while frothing it all together with a milk frother, or you can add it all to a Magic Bullet/or Ninja to combine! I find the secret is to use a frother or some sort of Magic bullet mixer –– stirring with a spoon doesn’t really cut it if you are wanting a delicious, creamy coffee/latte!
