Allison’s Festive Beet and Salad


2 large bunches of kale

2-4 roasted beets

2 handfuls pumpkin seeds


2 large cloves garlic

1/4 cup fresh lemon juice (1-2 lemons)

3-5 tbs. extra virgin olive oil, to taste

1/4 tsp. fine sea salt

1/4 tsp. fresh ground black pepper

1 tsp. pure maple syrup


Finely chop the kale leaves into thin pieces.  You should end up with about 8 cups of chopped kale.  Place kale in a bowl. Chop up the roasted beets into bite size cubes.

 For the dressing – mince the garlic very fine in a small food processor.  Add oil, lemon, salt & pepper and process until combined. 

 Pour the dressing onto the kale and massage into the kale with your hands.  This helps tenderize the kale.  Massage for about 30 seconds, taste and add the maple syrup. Mix in the beets and top with pumpkin seeds. 

This salad is perfect for the holidays thanks to the festive colour!  This salad is easy to make and tastes delicious! It is also extremely healthy salad thanks to the super food power of the main ingredients, kale and beets.  Thanks to them this salad is full of nutrients, antioxidants and will aid in detoxification.
