Baked Salmon and Asparagus in Foil

This Starchy Carb free meal is an excellent choice for our Bootcamp participants or anyone on The Hormone Diet.

2 pounds asparagus, trimmed

1 tablespoon extra-virgin olive oil

2 cloves garlic, minced

Sea salt and pepper to taste

4 skinless salmon fillets (4 ounces each)

Olive oil cooking spray

1 tablespoon chopped fresh dill, thyme or rosemary

1 lemon, thinly sliced

Preheat oven to 400F. Cut four sheets of aluminum foil, each about 6 to 8 inches long. Divide asparagus evenly among the sheets of foil. In a small bowl, stir together the olive oil and garlic; drizzle over the asparagus portion then sprinkle with salt and pepper. Rinse the salmon and allow excess water to run off. Season the bottom of each fillet with salt and pepper and lay over the asparagus portions. Spray each fillet with cooking spray and season with salt and pepper; top with fresh dill or herb of your choice and two lemon slices. Wrap the sides of the foil over the salmon, then fold over the ends to enclose the salmon. Place the foil pouches in a single layer on a baking sheet and bake 25 to 30 minutes, or until salmon is cooked through. 

If you feel you will need more food, add cauliflower rice or spiral steamed veggies.
