Ingredients:
Chopped small red onion
4-5 garlic cloves crushed
2-3 tsp Thai red curry paste (or more if you prefer stronger)
1 can of Coconut milk (my all time favourite is Avoy-D Coconut milk)
1 package of 2-3 chicken breast OR plant based protein
2-3 tsp garlic chili sauce
2 zucchinis chopped
1/2 – 3/4 cup of fresh pineapple chopped
Instructions:
Mix onion, garlic and red curry paste together in frying plan for 10 minutes. Gradually add all other ingredients leaving out coconut milk and pineapple until the end. Simmer until chicken is cooked through then add coconut milk and pineapple. Serve with cauliflower rice (OR basmati rice if you have worked out today. )
I recommend this curry on a strength training day due to the bromelain in the pineapple which helps with inflammation and muscle recovery.
