Dr. T’s Carb-Conscious Tacos – New & Improved

(4-5 servings)

INGREDIENTS:

Olive oil – 1 to 3 tbsp or I used Olive oil spray from Presidents Choice Organics

1 large white onion, chopped

2 to 4 bulbs of garlic, minced (Or more!)

2 packages of Taco Seasoning – Presidents Choice Blue Menu Taco Seasoning or Flavor God Taco Tuesday, Do not use Old El Paso! See my notes below!

Herbamare sea salt and herb mix

2 pounds of organic ground chicken OR preferred plant-based protein. I used Yorkshire Farms Organic ground chicken from Loblaws

1/2-1 cup organic chicken or vegetable stock

One red, yellow, and orange pepper diced

One zuccini, diced

2 Bags of Green Giant cauliflower rice – plain, mixed veggie or the sweet potato – cauliflower blend but this one has slightly more carbs – 11 grams a cup

Juice of one lemon

Hot sauce – Franks Red Hot or a mix of your favorites

Avocado (optional), sliced

Lettuce (used as taco alternative) best- Iceberg, Boston, Green Leaf and Butter Lettuce

Grated cheese (optional) – I recommend Presidents Choice Manchego Sheep Cheese

Cilantro (optional)

Cook in a frying pan:

Olive oil – 1 to 3 tbsp

1 large white onion, chopped

2 to 4 bulbs of garlic, minced

4 tbsp or more of Taco Seasoning – I recommend Flavor God Taco Tuesday Spice or you can make your own seasoning with a blend of spices something like this. Or use the President’s Choice Blue Menu Taco Seasoning. I do not recommend the Old El Paso Taco Seasoning (in fact I had an allergic reaction from this the night before filming Marilyn Denis on February 11th – woke up swollen – five pounds heavier and having a bad body day when I had to film national TV!

Herbamare seasoning to taste

Cook all of these until the seasoning is well mixed in and the herbs open up

Then add 1 pound of organic ground chicken OR preferred plant-based protein to mix

¼ cup organic chicken or vegetable stock

Cook again

Slice one red and one yellow pepper

Add to the chicken mix

Stir until cooked

Add one bag of cauliflower rice – you can make your own by grating a cauliflower or buy it already packaged (Green Giant) 340 g size

Then add lemon and more chicken stock to cook everything down

Add Frank’s hot sauce or another hot sauce (if you like it spicy) and half a squeezed lemon, stir and then top with:

Then grate cheese – cover the top and bake until melted

Then remove from oven, then place a serving of each on a lettuce boat with sliced avocado – fresh cilantro is optional.
