Crock Pot Chili

Ingredients:

1 of each red, yellow, orange peppers

2 small zucchini chopped

2-3 yellow onions

2-7 garlic cloves (personal preference – I used 7!)

1 lb of ground turkey

1 lb of ground chicken

1 can tomato paste

2 – 28oz can diced tomatoes (I blended 1 can blended to eliminate chunks, the 2nd can as is)

1 can red kidney beans – rinsed and strained

1 tbsp apple cider vinegar

Spices = dried oregano, dried basil, nutmeg and roasted cumin – these are to taste at least 1 tsp each.

4-8 tbsp Chili powder (I used 8 – I like things spicy!!)

2 – 3 tbsp molasses

2 tbsp maple syrup

Directions:

  1. Chop red, yellow, orange pepper, zucchini and onion.
  2. Crush garlic
  3. Cook onion, garlic in a large frying pan and then add meat.
  4. In crock pot add tomato paste, cans of tomatoes, beans, add peppers and zucchini.
  5. Stir in apple cider vinegar and spices, molasses and maple syrup
  6. Stir in meat, onions and garlic
  7. Simmer for a few hours, then have a taste and alter spices as you prefer. Don’t add too many as the spices take a while to blend…patience is a virtue 🙂

Make it plant-based by substituting the turkey/chicken with tempeh or tofu.
