Dr. Zahavi’s Healthy Chocolate Zucchini Muffins

INGREDIENTS:

2 medium shredded zucchinis 

1.5 mashed bananas

2 eggs OR Vegan alternative: 2 chia eggs or flax eggs (ratio to = 1 egg is 1 tbsp chia:3 tbsp water or 1 tbsp flax meal: 3 tbsp water, mix and let stand for 10 mins)

2.5 tbsp cocoa powder

1 cup GF all purpose flour (or flour of choice, whole wheat could work too)

1 cup rolled oats 

1.5 tsp baking powder

1 tsp baking soda

2 tbsp EVOO or melted coconut oil

1/4 tahini or nut butter (almond, peanut) or any type of seed butter (ie: sunflower butter)

1/4 cup maple syrup (1/2 cup if you like it sweeter)

Optional: 1/2 cup dark chocolate chips

Directions:

mix everything in the bowl

blend well until smooth and then pour into pan.

bake at 325F for 30 minutes or until completely firm.

Can also make a cake instead of muffins, bake at 325F for 18-20 mins
