GOAT CHEESE, GREEN PEA AND SPINACH FRITTATA
1 whole omega-3 egg
3 large egg whites
1-ounce goat cheese
1 tablespoon chopped onion
Se salt and pepper to taste
1-2 teaspoons extra-virgin olive oil
½ cup frozen green peas
1 ¼ cup frozen spinach
- Preheat the over to 350 F
- Beat the egg and egg whites in a medium-sized bowl with a wire whisk until blended. Mix in all the remaining ingredients except the olive oil with the eggs.
- Spread the olive oil in small skillet and add the egg mixture.
- Bake in the oven for 15-20 minutes, or until the frittata is fully set.
