GOAT CHEESE, GREEN PEA AND SPINACH FRITTATA

1 whole omega-3 egg

3 large egg whites

1-ounce goat cheese

1 tablespoon chopped onion

Se salt and pepper to taste

1-2 teaspoons extra-virgin olive oil

½ cup frozen green peas

1 ¼ cup frozen spinach

Directions:

  1. Preheat the over to 350 F
  2. Beat the egg and egg whites in a medium-sized bowl with a wire whisk until blended. Mix in all the remaining ingredients except the olive oil with the eggs.
  3. Spread the olive oil in small skillet and add the egg mixture.
  4. Bake in the oven for 15-20 minutes, or until the frittata is fully set.
