Spinach Salad

As seen in Supercharged Hormone Diet

serves 1

2-3 cups of fresh spinach

1/2 large carrot

1-2 cups of diced cucumber

1 small apple, grated

Red Wine Vinegar Dressing

2 tsp extra virgin olive oil

1 tsp rice wine vinegar

1/2 tsp fresh grated ginger

Toss spinach with the apple, carrot, cucumber. Mix the dressing ingredients together and drizzle over the salad. If not using this as a vegetable side dish, top with your choice of protein to make it a meal.
