TUNA POWER BOWL SALAD

Starchy Carb-free

Serves 2

3 cups of mixed greens or kale

½ cup diced cucumber

½ cup cherry tomatoes

¼ cup chopped celery

¼ avocado, chopped

2 tablespoons of chives

1 can light tuna, in water

1 tablespoon extra virgin olive oil

1 tablespoon rice wine vinegar

Juice of ½ lemon

1 teaspoon unpasteurized honey

1 teaspoon of dried dill

½ teaspoon ground ginger

Layer the greens in the bottom of a salad bowl and top with cucumber, tomatoes, celery, avocado, chives and tuna. In a small bowl, whisk together oil, rice wine vinegar, lemon juice, honey, dill and ginger. Drizzle over salad.

This is a great make ahead salad for work week!
